Oven Roasted Beets

Ingredients
- 6 cups beets, peeled and cut into 1/2 inch chunks
- 2 Tbps Canola oil
- 1 Tbsp apple cider vinegar
- 1/4 tsp fresh ground pepper
- 1 tsp favorite seasoning - Italian, Greek, etc.
- 1 tsp garlic powder

Instructions
- Preheat oven to 375 F
- Line a cookie sheet with foil or parchment paper. You may also use a large cake pan.
- In a large bowl, toss all ingredients until the beets are well-coated. Arrange beets in a single layer on pan and cover with foil. Cook covered 25-30 minutes.
- Uncover and stir. Bake uncovered another 25-30 minutes.
- Salt to taste and serve warm. These are also great cold in a salad.
