Flax Crusted Pork Cutlet

  1. Preheat oven to 350 F.
  2. Season pork cutlet with salt and pepper and set aside.
  3. In a food processor, blend bread crumbs, flax, parmesan and garlic. Place mixture into a small bowl.
  4. Brush each port cutlet with Dijon mustard, then coat with the coating mixture. Place pork cutlets on a baking sheet.
  5. Bake pork cutlets in preheated oven for 25-30 minutes or until the internal temperature reacher 145 F (63 C)
